Go for a cream moisturiser rather than a refreshing spray in your in-flight beauty bag. Although a spray might feel nice (and by all means use this as well for a nice little pick-me-up) because the air on a plane is so dry as a result of the pressurisation, any kind of liquid put into the air will just be absorbed by the surroundings immediately, before it gets anywhere near your face to be able to reap the benefits.
Spend your money wisely, and opt for a rich, hydrating moisturising or soothing balm to apply liberally to your skin whenever you feel you need it. It may seem weird, but be sure to get up around your nostrils with it too, to save this area drying out.
Dry Shampoo
